Test Kitchen # 26 ~ Jazzed Up Edition of an Old Favorite (Garlic Mashed Potatoes)

If there ever was a comfort food in my mind it is mashed potatoes. I love them. And not the instant come in a box kind either.
But real red potatoes with the skin left on, boiled with garlic, and mashed with lots of butter. And at the very least half and half instead of milk.
I realize that mashed potatoes aren’t something that one normally feels a need to follow a recipe to make but I do have to say that there are some secret ingredients that can make good potatoes (because really are there any bad mashed potatoes?) and turn them into great potatoes.

Here’s what you’ll need:
3 lbs red potatoes, washed and quartered
2 Tbsp fresh minced garlic (we like garlic in our house so I probably use a little more)
chicken broth
1 stick butter
4 oz cream cheese, cubed for easier melting
1/2 to 3/4 cup half and half 
salt to taste
Here’s what you’ll do:
Boil your potatoes in the chicken broth with the garlic. When they can be pierced through with a fork they’re done. Drain well and add the rest of the ingredients, adding milk slowly so as not to make the potatoes soupy.  Mash well until everything is blended. In our house we still like them sort of lumpy. Salt to taste.

If I have any left overs the girls like to take them for lunch the next day. I’ll add in bacon bits, sour cream, and green onion just like you would for a baked potato.

  1. Yum! The classic comfort food, my mom made mashed potatoes almost every night when we were growing up. I haven't used cream cheese in ours (which sounds delicious and I'm going to try) but we sometimes use mayonnaise to give it a creamier consistency. Kristina Croley
